These cookies are super simple, thick, chewy, sweet, and delicious. Using a box of cake mix and a couple of other ingredients, anyone can throw these together. As usual, my boyfriend was craving something sweet and since I had this box of cake mix in the cabinet, I decided to make some easy carrot cake cookies!
I often go check out the sale nook at the grocery store, which is where I found this box of cake mix. I also recently picked up a giant bag of walnuts at Costco, so I threw a handful of the nuts into the batter for some texture. Feel free to get creative and add a handful of white chocolate chips or some other nut instead. You could also add cream cheese frosting to the cookies, although these are very sweet already.
Although Carrot Cake is one of my favorite types of cake, I did not want to make a basic cake with with the boxed mix. I didn’t have any frosting on hand and was feeling too lazy to make some from scratch. I made basic vanilla cake mix cookies previously, and remembering how easy they were, I decided to try it again. These cookies were the perfect chewy texture, and definitely did not need frosting with how sweet they turned out.
How to Make your own Cake Mix Cookie Combination!
You can use any box of cake mix to make cookies, you just need to use the same ratio:
- 1 Box of Cake Mix
- 2 Eggs
- 1/2 Cup of Vegetable or Canola Oil
Feel free to use whatever cake mix you prefer or have on hand to try these out! Once you have that basic recipe down, you can add additional ingredients to the mix, such as nuts or chocolate chips. The nuts are not necessary, but I do think the add-ins elevate the texture. Adding the extra flavor element can add an interesting layer to the cookie, and help you make endless varieties.

How to Store your Easy Carrot Cake Cookies:
These cookies can be stored at room temperature in an air-tight storage container. I just wrapped plastic wrap over the plate that I had, and they did not go stale for at least a few days (before they were all eaten). You should be able to keep these for a week. If they start to get hard, heat up in the microwave for 10 seconds to soften them.

Look for cake mix in the discount section of your grocery store. Check out your local dollar store to see if they have boxes of cake mix, as that could save you a couple of bucks!
Recipe Step-by-Step
- Pour the carrot cake mix in a large mixing bowl.
- Add 2 eggs to the mix, along with a 1/2 cup vegetable or canola oil.
- Chop 1/2 cup of walnuts and add to the mixture.
- Mix all ingredients until combined.
- Roll dough into balls that are about 1″ diameter.
- Place onto a large baking sheet. I recommend lining the baking sheet with parchment paper. If you do not have any, don’t sweat it. Instead, a quick spray of oil on the sheet should do the trick, before laying out the cookies.
Rolled into 1 inch balls, this recipe makes about 18 Easy Carrot Cake Cookies – plenty to share! You can easily double or triple the recipe to make a huge batch of cookies.

- 1 box Carrot Cake Mix
- 2 Eggs
- 1/2 cup Vegetable Oil
- 1/2 cup Chopped Walnuts Optional
Instructions
- Preheat oven to 350°.
- Mix all ingredients in a large mixing bowl until combined.
- Form into 1 inch balls onto a large baking sheet.
- Bake for about 10-12 minutes, until just set in the middle.
